So this way, I make just what I need, in this case, four 6 oz dishes, which is enough for one each in my family. We all have our cobbler but we aren't eating it for days. You can choose to make this in smaller, say 4 oz dishes, and it will make 6 desserts. I only do that when I have extra company.
Cherries are ripe and for sale in all our Farmers' Markets right now. Which means they are plentiful, inexpensive and at their peak in flavor. Cobblers are such comfort food, even in the summer. My grandma taught me that a true cobbler has a biscuit crust. The sweet cream biscuits I make for this recipe have the perfect crumble, absorb the juice well, and hold up the ice cream so when it melts, it runs down into the cherry filling. Oh my.
We also think the tart cherries are the best for a cobbler. Montmorency cherries are the most common tart cherries. We find that early season Bing cherries will also have a tarter taste. The tart cherries balance the sugar in the filling and the biscuit.
Let's talk about that mint ice cream for a minute. I love to make unique ice creams for my desserts. I typically buy one carton of ice cream, divide it into thirds, and flavor up each third. I have containers that I put the ice cream in to refreeze. I'll take the carton out about 10 minutes before I am ready to serve to get it to the right consistency for scooping.

Easy Cherry Cobblers
Individual cherry cobblers are an elegant dessert any time of the year.
prep time: 30 Mcook time: 20 Mtotal time: 50 M
ingredients:
- 1 can cherry pie filling mix
- 3/4 c flour
- 1/2 c sugar
- 3/4 c heavy cream
- 1 t salt
- 3/4 baking powder
- 1/3 carton of vanilla ice cream
- 3 drops of peppermint flavoring
- 4 mint leaves
instructions:
How to cook Easy Cherry Cobblers
- The day before... thaw vanilla ice cream.
- Scoop 1/3 of the carton into a bowl.
- Add three drops of peppermint.
- Stir until incorporated.
- Pour the ice cream in a freezer-safe container.
- Freeze overnight.
- Preheat oven to 425.
- Remove ice cream from the freezer.
- Combine the dry ingredients.
- Add the cream, stir just until mixed
- Using a Silpat mat, trace the top of the dessert container.
- Dollop dough inside the circle, leaving about 1/4 inch from the edge.
- Bake for 11 minutes, checking halfway through.
- Remove from oven and let rest.
- In the meantime, open can of pie filling.
- Pour into a large bowl.
- Microwave in increments of 1 minute, three times, stirring after each minute.
- In four dishes, spoon pie filling into the dishes, dividing evenly between the dishes.
- Add a biscuit to each dish.
- Spoon ice cream on top of the biscuit.
- Garnish with mint.
