The perfect vanilla cupcake is here! I have worked on this recipe off and on for about 40 years, tweaking it until I believe I have what is the perfect vanilla cupcake! I've used cake mixes and homemade recipes, but this one is my all time favorite.
I've played with cake flour or all-purpose flour but I love the sturdiness of the all-purpose flour best. It holds frosting well and gives me a nicer curve at the top. I have tried different kinds of milk, too, and when I tried buttermilk, I was sold. The nice tang of the milk really accents the vanilla. I like two eggs instead of three, three seems to overpower the vanilla. I've messed with the oils, too, and I like the flavor that butter gives. I don't add salt to the cake so I use salted butter. The vanilla bean, in addition to the vanilla, gives the cupcake a real vanilla taste. So good!

The Perfect Vanilla Cupcake
Simple, delicious, homemade!
prep time: 15 Mcook time: 20 Mtotal time: 35 M
ingredients:
- 1 1/4 c flour
- 1 1/4 t baking powder
- 1/2 t baking soda
- 2 eggs, room temp
- 3/4 c sugar
- 2 t vanilla extract
- 1 stick of salted butter, melted
- 1 vanilla bean (you can leave this out but it does impact the flavor)
- 1 c buttermilk or whole milk
instructions:
How to cook The Perfect Vanilla Cupcake
- Preheat oven to 350.
- Line cupcake tin with cupcake liners.
- Mix together flour, soda, powder, and sugar until well blended.
- Beat eggs, butter, buttermilk, and vanilla together.
- Add the flour mixture to the egg mixture, beating on medium for 2 minutes.
- Slice the vanilla bean lengthwise, open.
- Scrap the seeds by going down the length of the bean.
- Add the scrapings to the cake batter and beat slowly until incorporated.
- Fill the cupcake liners 2/3 full.
- Bake the cupcakes for 15-20 minutes or until an inserted toothpick comes out clean.
- Let cool completely before frosting.
