I had a group of girlfriends over to help me taste test the cocktail. I knew what was in a mojito, but I wasn't sure of the distribution of fruit, lime juice, soda, etc. We made the first batch without any sugar except for the sweetened lime juice. It fell a little flat so we added some simple syrup and that made the cocktail refreshing and tasty. Some observations that we made were to chill the soda and the rum before mixing the cocktail, you can never use too much mint, and adding a touch of simple syrup made all the difference!
Muddling makes a difference, too. You want to mash up the fruit so it doesn't get stuck in the straw!
I have learned that sharing a cocktail with girlfriends is a very pleasant way to spend an hour! We should all do this much more often.

KiPin Mojita
A tropical mojito that is refreshing and not too sweet!
prep time: 5 Mcook time: total time: 5 M
ingredients:
- 3 T diced pineapple
- 2 T cup diced kiwi
- 8 fresh mint leaves
- 2 tsp sweetened lime juice
- 1 T simple syrup
- 2 oz. light rum
- Soda water to top
instructions:
How to cook KiPin Mojita
- In the bottom of a cocktail glass, muddle together pineapple, kiwi, mint leaves, and lime juice until pureed as much as possible.
- Add simple syrup.
- Add ice to the glass and pour in rum. Top off with soda water.
NOTES:
In place of the simple syrup and soda water, use Sierra Mist.
