I think cheesecakes should be decorated, too! I make this simple, baked, vanilla cheesecake with the idea of decorating it for a summer mermaid bash! Let me show you how simple it is!
First I make this delicious baked cheesecake. There's only 4 ingredients for the crust and 4 ingredients for the cheesecake. Still packed with delicious flavor. I used a springform pan I got from Meyer/Anolon.

I used a candy mold of mermaid tales, orange cream melts, and key lime icing all from the Wilton line for decorating the cheesecake.

Cheesecake with Key Lime Stars and Orange Cream Mermaids
Easy baked cheesecake decorated for a summer party!
prep time: 30 Mcook time: 30 Mtotal time: 60 M
ingredients:
For the crust
- 1 1/2 c crumbs (vanilla wafer, graham cracker, shorbread)
- 6 T melted butter
- 6 T sugar
- 1/4 t salt
For the cake
- 2 8 oz blocks of cream cheese, room temperature
- 2 eggs
- 1 c sugar
- 2 t vanilla
For the decorations
- 1 pkg Wilton's Lime Decorating Icing with attached decorator tip
- 1 pkg Mermaid Cupcake kit
- 1 pkg orange cream Candy Melts

How to cook Cheesecake with Key Lime Stars and Orange Cream Mermaids
For the crust
- Mix all ingredients.
- Press firmly into the bottom of a springform pan.
- Bake at 350 for 10 minutes.
- Let cool.
For the cake
- Beat eggs and sugar until well blended.
- Add cream cheese and beat until smooth and fluffy.
- Add vanilla and stir until well incorporated.
- Pour into springform pan.
- Bake at 350 for 20-25 minutes.
- The center will not look done.
- Let cool until cake firms up.
- Remove from springform pan.
For the decorations
- When cheesecake is completely cool, and right before serving, add the lime decorating icing using the star tip. I chose to decorate the edge, but you could do it any way you wish.
- Use the candy form in the cupcake kit to make mermaid tales. Melt 1/2 cup of candy melts in a plastic decorator's bag. Microwave in 30 second increments until completely melted. Cut the end and fill the mold with melted candy melts. Place in the refrigerator until tales are set.
- Using cool whip, place a mound in the center, add mermaid tales and sprinkle the sprinkles included in the cupcake kit.
- Refrigerate after serving.
