Lavender Tea Bread with Lemon Glaze

My favorite way to celebrate Mother's Day is to go to a fancy brunch. I love having beautiful mimosas, decadent dishes to try and luscious breads:  scones, biscuits, tea breads all beautifully matched with special butters to go on them!  We are helping you create that pampered feeling of a fancy brunch without having to spend the big bucks!



Today I have created for you a delicious tea style bread with the ease of a cake mix.  The bread comes out lovely, with a nice crumb and a delicate lavender taste.  The lemon glaze is properly tangy with the sweet bread.  I made this, including baking, in under an hour.  It can be made the day before as well.

I completely cool this bread before pouring on the glaze, but my mom likes to let the bread be a bit warm.  When the whole thing cools down, you will get a nice crunchy glaze.  I love serving this with a cup of tea, especially The Republic of Tea's Blueberry Lavender Tea.  It is the prettiest purple color!

Tea Infused Lavender Tea Bread with Lemon Glaze

Easy and delightful tea bread that is perfect for Mother's Day brunch!
prep time: 20 Mcook time: 30 Mtotal time: 50 M

ingredients:

  • 1 vanilla cake mix, white or yellow
  • 2 lavender tea bags
  • 1 c milk
  • 1/4 c oil
  • 1 egg
  • cooking spray
For the Glaze
  • 1/4  c powdered sugar
  • 1 t milk
  • 1 t fresh lemon juice

instructions:

  1. Pour milk into a microwaveable cup.
  2. Add the two tea bags.
  3. Microwave on high for 1 minute or until milk is extremely hot.
  4. Steep for 15 minutes.
  5. Preheat oven to 350.
  6. Add cake mix to a bowl.
  7. Add egg and oil.
  8. Remove the tea bags from the milk and squeeze all the liquid out.
  9. Pour the milk into the bowl.
  10. Stir with a spoon until ingredients are well incorporated.
  11. Spray a loaf pan with cooking spray.
  12. Pour mixture into loaf pan.
  13. Bake at 350 for 30 minutes.
  14. Let cool for 15 minutes.
  15. Remove loaf from pan and cool completely.
For the glaze
  1. Measure out the sugar, then run through a sieve to remove lumps.  
  2. Add milk and stir.
  3. Add lemon juice and stir
  4. Adjust thickness with lemon juice or milk, depending on how tart you want the glaze.
