We recently vacationed in Sedona, Arizona. We made this casserole and enjoyed it for a couple of days. We save so much money by making our breakfasts. My husband is the king of breakfast cooking so a restaurant has to compete with his yummy foods. We typically eat breakfast out once or twice just to give the cook a rest!

Easy Tator Tot Breakfast Casserole
Delicious breakfast casserole using ingredients you typically have in your kitchen.
ingredients:
- 12 eggs
- 8 oz shredded cheese
- 3 small peppers, one each of red, yellow, and green
- 1 lb sausage
- 1/2 lb hamburger
- 1 onion, chopped
- 1 small bag of tator tots
- butter
instructions
- Preheat oven to 350. Butter 9 by 13 pan on bottom and sides.
- Place hamburger and sausage in a large skillet and cook until slightly pink. Add chopped onions and peppers and cook until peppers are soft. Drain.
- In a separate bowl, add eggs and beat until all eggs are blended. Add 1/3 of the cheese and stir in.
- Lay tator tots in a single layer in the 9 by 13 pan.
- Top tator tots with sausage/hamburger/veggies mixture.
- Pour eggs over sausage mix.
- Bake for 40-45 minutes. At the last 10 minutes, sprinkle remaining cheese on top and finishing baking.
- Remove dish from the oven. Let set 10 minutes before serving.

Oh how I wish my husband would eat things like this. He just is not a fan of casseroles and especially of breakfast ones. He doesn't like cheese with eggs and he won't eat tater tots. He also won't eat leftovers so making one dish for two meals never happens here.
