To start our meal, take a look at this beautiful Caprese Salad with Mozzarella Hearts appetizer made by Lauren from Mom Home Guide. This is easy to make ahead of time so you can set it out when you start cooking. This would be good with some sparkling wine, or sparkling grape juice.
Our next course is this heart-healthy salad made by Evelyne from Nemcsok Farms. The Happy Heart salad is fresh with delightful fruits and spring mix greens.
As a side dish, I made Green Beans Almondine to go along with the shrimp. I used fresh green beans so that you would get a little snap. It is an easy side dish to prepare and you can make this in advance and reheat when you cook your shrimp.

Green Beans Almondine
The perfect side dish for any protein.
prep time: 5 minscook time: 12 minstotal time: 17 mins
ingredients:
- 1 lb fresh green beans
- 1/2 red onion, finely diced
- 2 T butter
- 1/3 c sliced almonds
- 1/2 lemon
instructions
- Melt 1 T butter in a medium skillet. Add onion and saute until golden brown. Add garlic and cook for about 30 seconds. Add almond and cook for about two minutes. Remove mixture from pan. Melt 1 T butter in the same skillet. Add in green beans and saute until desired doneness. Remove from skillet to serving dish. Top green beans with the mixture and Sprinkle on juice from the lemon.
