Boxty uses buttermilk, mashed potatoes, and grated potatoes. In an effort to reduce the number of ingredients and to make them quick and easy, I use only grated potatoes and leave out the buttermilk. For me, these potato pancakes taste a lot like mom's.

Boxty
Delicious Irish style potato pancakes just like my mom used to make!
prep time: 10 minscook time: 20 minstotal time: 30 mins
ingredients:
- 3 c frozen shredded hash brown potatoes
- 2 T all-purpose flour
- 2 eggs, lightly beaten
- 3 T butter, melted
- 1-1/2 t water
- 1/2 t salt
- 1/2 t pepper
- 1/2 t onion powder
- 1 T vegetable oil
instructions
- Rinse the frozen hashbrowns in a strainer.
- Lay on paper towels and pat dry.
- Beat the eggs in a cup and add spices.
- Add butter and beat well.
- Add flour and stir until thoroughly incorporated.
- Heat the vegetable oil in a large skillet.
- Scoop out 1/3 c of the potato mixture into the skillet, flattening into circles.
- Let cook until the bottoms are golden brown.
- Flip.
- Cook golden brown.
- Drain on paper towels.
NOTES:
Serve with sour cream and chopped green onion,

I love potato pancakes and I haven't had them in so long. I will have to change that and make these soon! I love to top mine with sour cream and green onions.
