Now for my No Bake Egg Nog Pie. I first wrote up the recipe for my daughter and son-in-law and I gave myself a little chuckle when I sent the email. I'll share it with you here:
Make the crust:
1 1/2 c graham cracker crumbs (you can buy a box of graham cracker crumbs or you can crush approx 12 full sized graham crackers
1/3 c sugar (I replace it with the granulated sugar replacement in the pantry)
6 T butter, melted (this is not the same as 6 T of melted butter. Measure 6 T of butter and then melt it)
Mix the sugar and graham cracker crumbs. Pour in the butter and mix well. Pour the mixture into your pie pan and press until firm. I have a roller I use for this purpose. Place crust in the refrigerator to firm. That takes a few hours (3-4.)
Make the filling (don't mess with these ingredients!)
1 box INSTANT sugar-free vanilla pudding
2 c light eggnog
1 container of Lite Cool Whip, thawed
Beat the eggnog and pudding together until pudding is slightly firm. Fold in the Cool Whip. Fold until all the ingredients are well blended. Do not whisk, or put into a blender, or use a mixer or a hand blender. Do this by hand. If you aren't familiar with folding as in cooking, look it up so you won't deflate the filling.
Pour the filling into the prepared pie crust. Set it in the refrigerator for at least 3 hours or overnight is even better. It gives you a nice firm pie.
NOW you can mess with the topping, make your homemade whipped topping with rum, etc. Rum is traditional with eggnog but I think brandy would be extraordinary! You may want to add a tablespoon of the sugar replacement to your whipping cream. When you add sugar to making whipping cream, add it at the beginning. Get your mixing bowl and whisk cold by putting it in the freezer for 20 minutes. Start cold and go high! Also adding a pinch of sugar makes it so much better.
And if you want an extra special pie, add 1 T of the Loran's Eggnog Flavoring to the pudding mixture. Fold in until well incorporated.
