Freaky Friday Muffins with Cherimoya #FreakyFridayFruits

Happy Friday!  I am pre-empting my regular Friday Favorites to bring you this great muffin recipe made with cherimoya. Thank you to Melissa's Produce for sending these great fruits for us to try out! Cherimoya Muffins

I chose to work with the chirimoya fruit because I loved the way it looked.  Mark Twain described it as "the most delicious fruit on earth."  That's quite the recommendation!  It is grown in Central America.  The ripe fruit is creamy with a banana/papaya/strawberry flavor.  The seed is not edible.


I created this muffin recipe using the fruit. When taste testing with my family, they thought it was a banana muffin, but with a more creamy fruit. They very much liked these muffins!

Yield: 12 muffins

Cherimoya Muffins

prep time: 18 minscook time: 20 minstotal time: 38 mins
Cherimoya, a creamy fruit from Central America, is a banana like texture perfect for muffins.

ingredients:

1 1/2 c flour
1 t baking soda
2 eggs
dash of salt
1/2 c butter
 3/4 c Imperial sugar
1 t vanilla
1/2 c apple juice
1 cherimoya

instructions:

Preheat oven to 400 degrees F.  Line a 12 cup muffin tin with muffin papers.  But cherimoya in half, spoon flesh into bowl and remove the reeds.  Chop fruit.  Combine flour, sugar, baking powder and salt. In a separate bowl, beat butter until smooth.  Add eggs, one at a time.  Add dry ingredients, one half at a time. Add apple juice, then the remaining dry ingredients.  Fold in cherimoya.  Divide batter into muffin cups, filling them 3/4 full. Bake 20 minutes.  Top with cinnamon/sugar mixture.
