Detroit Pizza?

Detroit Pizza is a square pizza, made in a steel square shaped pan like this one, that was used in the automotive industry to hold small parts. I love this, recycling at its best!  The Detroit pizza is considered a flipped pizza, but the crust is still on the bottom.  Toppings are next to the crust, dotted with cheese then stripes of sauce. The crust is thick, with crispy edges made by cooking the dough in a bit of oil.

We decided to try this pizza and give it our 100% best effort by making the crust as well. Pizza crust is so easy to make and takes very few ingredients. I've added the recipe to the pizza recipe below. Give it a try! All you need is a bit of time, flour, water and yeast.

Detroit Style Pizza

prep time: 2 hour and 30 minscook time: 25 minstotal time: 2 hours and 55 mins
This is a take on the delicious Detroit Pizza. We loved it so much that I want to get my hands on one of those square pans!

ingredients:

10.5 oz bread flour
1 pkg INSTANT dry yeast
1 t salt
8 oz lukewarm water
48 pepperonis
8 oz Jack cheese cut into squares
2 c  pizza sauce 


instructions:

Oil a medium-sized bowl. Mix flour and yeast, add water. Using the dough hook on your mixer, beat until the dough pulls together. It will be sticky.  Cover and let rest for 10 minutes. Remove from mixing bowl and knead on a flour covered surface until dough forms a smooth ball. Place in oiled bowl and let rise until doubled, about 2 hours. 

Drizzle oil on a 9 by 13" pan.  Gently stretch the dough to the edges. Keep stretching gently until dough touches the edges. Let rest for 10 minutes, then stretch again if needed.  

Preheat oven to 500 degrees F.

Add pepperonis to pizza, 6 down the 9" side and 8 down the 13" side. Place cubes of Jack Cheese around the pepperoni.  Pour the sauce in three long stripes down the pizza.  Bake pizza 20 minutes, checking on the center of the dough for doneness.  Crust edges get dark.  Remove from oven and let rest 10 minutes.

Cut into squares and serve
