This delightful tart is awesome as a meal itself. No meat needed! Serve with a side salad topped with Green Goddess dressing and you have a meal that says "SPRING!" loud and clear.
Asparagus Tart
1 lb of asparagus, hopefully thin stalks, snapped right above the cut
8 oz of shredded cheese. I prefer fontina, but guyere and havarti are nice, too
2 sheets of puff pastry
Preheat to 425. Place a piece of parchment on your cookie sheet and place the puff pastry on it. Sprinkle on the cheese, then lay the asparagus in straight lines across the pastry. Salt and pepper if desired. Bake for 20-25 minutes until golden brown. Remove from the oven. The pastry will be high and fluffy but will soon start to deflate. No worries, that's what it always does.
To serve, cut into squares and drizzle with a little balsamic vinegar.

I love all vegetables and that includes asparagus. I never heard of a tart like this but it seems like a great side dish for any meal.
