Florida was recently hit hard by Hurricane Irma. The southern part of the state, especially the Keys, are reeling from the impact. The Caribbean was also devastated. I have fond memories of my time in the Caribbean, so my heart truly aches for them.

This dish is so simple, delicious, and can be made from the frozen state (which I prefer, as it seems to help lock in moisture.) Perfect for a week night dinner!
Baked Salmon
1 wild caught filet for each person
1 T butter for each filet
1 clove garlic for each filet
1/4 c grated parmesan for each filet
1/4 c mayo for each filet
fresh chopped dill, about 1 T for each filet
Preheat oven to 350. Line a baking sheet with parchment paper, or that nonstick foil. Put the filet on the pan and season with salt and pepper. In a skillet, melt the butter, add garlic and cook until fragrant. Reduce heat and stir in parmesan and mayo. Stir until well incorporated. Spread mixture over filet and bake for 20-25 minutes or until salmon flakes with a fork. I like it best when the flesh is slightly translucent. Yum.
We like it served over caulirice or zoodles.
