The Ultimate Crockpot Corn on the Cob Recipe

We love corn on the cob at our house and we cannot get enough of it. Like seriously, it's a total staple piece. Especially since the corn is grown right here in our neighborhood at a farm called GlenMark Farms. We know the owners and enjoy going to their place for freshly picked tomatoes and corn, and then picking up a pie or some jarred pickles or salsa.  It is a wonderful part of our community!

This is such a great dish to make for company.  The best part is that you can start cooking corn and forget it, especially if your crock pot has a keep-warm setting on it!  The flavorful corn is perfectly seasoned and buttered, just provide a set of tongs to serve! Yep, it really is as easy as that.


This is so simple that it is hard to even call it a recipe.  We can't even imagine making it any other way, especially if we are going to serve it to a crowd of people!


Crockpot Corn on the Cob Recipe


  • 8 ears of corn (desilked and husked)
  • 1/2 c water
  • olive oil
  • butter
  • salt and pepper

  1. Cut the cobs in half.  
  2. Lightly coat the corn in olive oil and then sprinkle with salt and pepper.  
  3. Add water to the crock pot and turn on high.  
  4. Add corn to the crock pot of boiling water.  
  5. Cook for 3-4 hours on high. Cooking times may depend on the type of crockpot you have.
  6. When the corn is ready (look for bright yellow ears) drain the water and add butter, tossing to coat all ears.

Leftover Corn On The Cob Recipes

If you have leftover corn on the cob, don't let it go to waste. There are so many delicious ways to repurpose it into delicious new dishes! Here are some delicious and fantastic ideas to use up that extra corn:


Corn Salad

A fresh and vibrant corn salad is the perfect way to use up leftover corn on the cob. All you need to do is cut the kernels off and toss them with chopped tomatoes, cucumbers, red onion, and a light vinaigrette dressing. You can also add herbs like cilantro or parsley for extra flavor. This makes a great side dish for BBQs or a healthy lunch for you to snack on.


Corn Fritters

Turn your leftover corn into golden crispy corn fritters. Start by mixing the corn kernels with flour, eggs, milk, and a little tad of baking powder. Then season with salt, pepper, and herbs of your choice. Once you've done that, fry spoonfuls of the mixture until golden brown. Serve with a dipping sauce like sour cream or spicy mayo.


Corn Chowder

You can transform your corn on the cob into a hearty soup by making a yummy corn chowder. After cutting the kernels off the cob, sauté some onions, garlic, and potatoes in a pot. Then add the corn, chicken, or vegetable broth, and cream, then simmer until the flavors all go together. For extra texture, you can choose to puree part of the soup and leave the rest chunky.


Corn Tacos

Leftover corn can be the perfect addition to some delicious corn tacos! Just cut the kernels off and combine with sautéed onions, beans, and a squeeze of lime for a really yummy vegetarian taco filling. Add toppings like cheese, avocado, and salsa to add some pizzazz. Ps: you can make these beauties with fresh corn too!


Corn and Potato Hash

You can also use corn in a savory breakfast or brunch hash. Sauté diced potatoes with onions, bell peppers, and your leftover corn kernels. Season with paprika, cumin, and salt. For an extra protein boost, you can add a nice fried egg on top.


Corn Quesadillas

For a quick meal, you can make corn quesadillas! Spread corn kernels over a tortilla along with cheese, sautéed onions, and maybe some beans or leftover chicken if you have it. Then fold the tortilla in half and cook until crispy and golden on both sides. Serve with sour cream or guacamole to finish it off.


Corn Pudding

Okay, this one might sound a littttle odd at first, but hear me out. Corn pudding is a great way to use leftover corn. Mix the corn kernels with eggs, milk, butter, sugar, and a bit of flour. Bake until set and golden for a savory-sweet side dish that you'll want to make again.. and again and again.
