Easy Enchiladas

Have you ever been to a Progressive Dinner?  It's a dinner party that is held in multiple homes and the guests travel between homes for the different courses.  Welcome to the Blooming Bloggers Progressive Dinner where we are celebrating Cinco de Mayo!

We are starting at Carol's for a Michelada, a Mexican style Bloody Mary.   Head over to her blog for the recipe but here is what you'll be drinking!  You'll also have these delightful Bacon Wrapped Chicken Bites, too.

Bacon Wrapped Chicken Bites

After we get our merry on at Carol's we are headed over to Heather's for Ceviche.  It looks delicious! The recipe is on her blog and you don't want to miss it.

Our main dish is at my house!  Come on in and have yourself some delicious Easy Enchiladas.  Such a simple recipe and it has homemade enchilada sauce.  So easy, too!

Easy Enchiladas
Easy Enchiladas

Prep Time: 20 minutes
Cook Time: 20 minutes
Ingredients (4 servings of 2 enchiladas eac)
  • 2 c enchilada sauce
  • 1 can cream of chicken soup
  • 1 small white onion, small dice
  • 2 c cooked shredded chicken
  • 1 sm can green chilies
  • 1 c sour cream
  • 8 8" flour tortillas
  • 2 green onions, sliced
  • salt and pepper to taste
Instructions
Preheat oven to 400. Prepare 9 by 13 pan with cooking spray, set aside.
In a large bowl add sour cream, 1 c cheese, cream of chicken soup, salt and pepper, chilies, onion and chicken. Mix together.
Take a flour tortilla, spoon mixture in a line across the tortilla. Fold sides of the tortilla in, then roll. Place the rolled tortilla seam side down in the prepared dish. Continue until all the tortillas are used.
Spoon enchilada sauce on top and sprinkle with the remaining cheese.
Bake at 400 for 20 minutes until filling is hot. Remove from oven, cool for 5 minutes then serve, using sliced green onion as garnish.

  19. I've never seen a progressive dinner party before. How fun! Micheladas are fun to make, although my husband made one a few days ago and remarked that before he met me he just called the "red beers" haha! I love your enchiladas. They look absolutely scrumptious! Happy {belated} Cinco de Mayo!
