Limoncello and Cocktails #SundaySupper

The first sip of Limoncello in the summer time is like a burst of sweet sunshine in your mouth.  The secret to amazing limoncello is the quality of lemons you have.  I was so fortunate to have fresh-picked lemons from a carefully nurtured tree in Arizona as the source of my limoncello.  It is well worth the price!

For this week's Italian Feast with #SundaySupper, be sure to have an ample supply of Limoncello to end your meal.  Absolutely fantastic.



Once you have made the Limoncello, you can use it for a base for many delicious cocktails.  My favorites are included below.



Homemade Limoncello

Prep Time: 30 minutes
Ingredients (approx 8 cups)
  • 10-12 lemons
  • 1 750 ml bottle of vodka
  • 3 c water
  • 2 c sugar
Instructions
With a vegetable peeler or sharp knife, remove the peel from the lemon in long strips. Make sure there is no white pith remaining on the peels. Place the peels in a glass bowl, and pour the vodka over the peels and cover with plastic wrap. Let the peels and vodka do their job for at least 4 days.
Combine the sugar and water in a saucepan over medium heat until the sugar dissolves, about 3-5 minutes. Cool. Pour the syrup into the vodka mixture. Cover and let it steep overnight. Strain the mixture through a mesh strainer, and then strain one more time using a coffee filter. Transfer to a pretty jar, and refrigerate.

Of course this is absolutely delicious all by itself.   It's rather amazing, really.  Some people might think it is absolutely wrong to mix it with anything else, but there are others, like me, who like the following concoctions as well.

Tuscan Pear

1 pt pear vodka
1 pt orange juice
1/4 pt ginger liquer
1/4 pt simple syrup
2 pt limoncello

Shake together with ice.  Garnish with orange or mint.

Gin Cello

1/2 pt lime juice
1 1/2 pts gin
1/2 pt limoncello

Shake with ice, strain.  Garnish with thyme.

Bubbly Berry Cello

3 pts Prosecco
1 pt limoncello
frozen berries of your choice

In a champagne glass, drop in 3-4 frozen berries.  Add in limoncello.  Pour Prosecco to the top.
