I'm participating in a special Secret Recipe Club project: Because there are 5 Mondays in February, we get to play with a theme and this month the theme is Leprechauns and Bunnies! This fun and funky event, I was paired up with Ashley from Cheese Curds in Paradise. What a great name!
Ashley is from Green Bay and if she only knew how big of Packers fans this family is, she'd just hand over her season tickets and call it a day. Wishful thinking on my part, I know.
Keeping with the theme, I searched through Ashley's extensive recipe index and when I came upon this pesto spread, I knew that I had found my match. What a yummy idea! I will be back to look through her index, though. I can't wait to try these Blackberry Cabernet Turkey Meatballs and her Breakfast Pie.
Bacon Pesto Spread
Ingredients
12 oz cream cheese, softened
1/2 cup sour cream
12 slices bacon, cooked and chopped
1/3 cup pesto
1/2 cup quartered cherry tomatoes
Instructions
Mix together cream cheese and sour cream until smooth. Stir in the pesto and then gently mix in the bacon (reserving 1 Tbl for topping). Spread into a serving dish. Top with quartered tomatoes and chopped bacon. Serve immediately with crackers or bread, or chill until ready to serve.
My dinner party went nuts for this spread! We had it spread on good french bread, but later I tried it on tortilla chips and even saltines, so delicious. Go and check out all the other Leap Day goodies around the link up today!

HI Terri. Just trying to get a few 'catch up' visits in! That looks good. We live in Green Bay, too, and are season ticket holders since they started out as the Acme Packers. It is Crazy Town around here during football season. Hope you had a great month! xo Diana
