Homemade Limoncello

You might remember that I got a boxful of luscious lemons from a friend who lives in Arizona.  Those lemons were the freshest lemons I have ever seen.  I knew I needed to make a batch of limoncello with them!

This stuff is like drinking liquid sunshine!  It is sweet but not so sweet it hurts your teeth!  The lemon is soft and not bitter.  Perfect ending to a spaghetti dinner!

Homemade Limoncello

Prep Time: 30 minutes

Ingredients (approx 8 cups)
  • 10-12 lemons
  • 1 750 ml bottle of vodka
  • 3 c water
  • 2 c sugar
Instructions
With a vegetable peeler or sharp knife, remove the peel from the lemon in long strips. Make sure there is no white pith remaining on the peels. Place the peels in a glass bowl, and pour the vodka over the peels and cover with plastic wrap. Let the peels and vodka do their job for at least 4 days.
Combine the sugar and water in a saucepan over medium heat until the sugar dissolves, about 3-5 minutes. Cool. Pour the syrup into the vodka mixture. Cover and let it steep overnight. Strain the mixture through a mesh strainer, and then strain one more time using a coffee filter. Transfer to a pretty jar, and refrigerate.
