Overnight Blueberry French Toast

Our cooperative share with Danjo farms is giving us a lot of blueberries, which we love!  It is time for our annual Secretary's breakfast at school, and this is the delicious dish I am bringing to share with my colleagues! I love that the blueberries and cream cheese are decadent but nutritious, too!


Blueberries provide such good nutrition. I love to garden, and I think adding a blueberry bush to our backyard would be an awesome thing to do. I know that there are some good sites that talk about the best way to plant blueberries. Every year I think I am going to do it, but still haven't managed to get a bush into the ground!

Overnight Blueberry French Toast

Since it is made the day before, this saves a lot of time in the morning! Just bake and serve.

Ingredients:

  • 12 slices of bread, cubed (brioche, french, texas toast)
  • 1 cup milk
  • 1 8 oz container of cream cheese
  • 12 eggs
  • 1/3 c maple syrup
  • 1 c blueberries

Instructions:

How to cook Overnight Blueberry French Toast

  1. Spray a 9 by 13 pan with Pam and put one layer of bread cubes down (6 slices of bread). Cube cream cheese and lay that on top of the bread. Layer on the blueberries. Top with remaining bread. Beat eggs, milk, and syrup together. Pour over layers. Cover with foil and let sit in the frig overnight.
  2. Heat oven to 350 and bake covered with foil for 30 minutes. Remove foil and bake another 30 minutes. Serve warm with syrup.

Notes:

Serve with homemade blueberry syrup!
1 c sugar
1 c water
2 T cornstarch
1 c blueberries
Mix water, sugar and cornstarch and cook over medium heat until thickened. Add blueberries and simmer 10 minutes or until blueberries have cooked down. Serve!
A little powdered sugar on top is great, too!

    First off I would like to say great blog! I had a quick question which I'd like
    to ask if you don't mind. I was curious to know how you center yourself and clear your
    head before writing. I've had trouble clearing my mind in getting my thoughts out.
    I do enjoy writing however it just seems like
    the first 10 to 15 minutes are usually lost just trying to figure out how to begin. Any suggestions or hints?
