Diet Soda Cake
In addition to our other treats for the Super Bowl, we made this low cal, low point cupcakes. I used lemon to stay within the Green Bay Packers colors of yellow and green. I tinted Cool Whip green and topped these cupcakes. Cute and tasty! I want to thank my friend Emily for telling me about this recipe!
Diet Soda Cake
Adapted from Gina's Weight Watcher Recipes
Diet Soda Cupcakes
Servings: 21 • Serving Size: 1 cupcake • Old Points: 2 pts • Points+: 2 pts
* 1 dry box cake, any flavor (I used Lemon)
* 10 oz diet soda, any flavor (I used Diet Cherry 7 up)
* 2 egg whites
Preheat oven according to box directions. Beat cake mix, diet soda and egg whites. I used my large Pampered Chef scoop to fill the cupcake papers 2/3 full.
Bake as directed on box, or until toothpick comes out clean when inserted. Let cake cool about 10 minutes. Top with fat free whipped cream if you wish.

I made this with a chocolate cake and diet coke. SO moist and delicious. I've been wanting to try another version. Love the green frosting!
