Peanut Butter Cookies
1 cup peanut butter, low fat, crunchy, creamy whatever...
3/4 c sugar
1 egg
Blend the egg into the sugar. You will have to beat a bit hard but you can do it! Next, add the entire cup of peanut butter and blend into the sugar/egg mixture. Roll into small balls and flatten with a fork in two different directions to get a pretty cross hatch pattern. The fat in the peanut butter keeps the mixture from being sticky! Bake for 10 minutes at 375. Cool for a minute before removing. These are great! Instead of cross hatching, you can unwrap a Hershey kiss and press into the ball. Bake for 8 minutes at 375. You will get a softer cookie.
