In the spring we start to see strawberries go very cheap and that is my sign to make strawberry shortcake! I use my mother in law's recipe, which creates a perfect cake to absorb all the juices you get from the fresh strawberries.
Shortcake
2 c biscuit mix (I use Pioneer)
1/2 to 3/4 c sugar (I use less)
1 c milk
1 t vanilla
Preheat oven to 350. Mix batter together to get a soft sticky dough. Spray cookies sheet with Pam. Form balls of dough (very sticky) and place them on the cookie sheet. Bake about 8-9 minutes until light brown on top.
Strawberries
1 pt strawberries, hulled and sliced
sugar
Cut up strawberries in a bowl. Sprinkle with sugar on top. Stir the sugar around. Mash with a potato masher, breaking up the big chunks. Let sit an hour or two to get the juices running. I usually keep mine on the kitchen counter.

ReplyDeleteI just saw a very similar recipe on another "recipe blog" and she added a few white chocolate chips into the batter before baking. Wouldn't that be a great surprise? This looks wonderful. I keep waiting for tastier strawberries. The few I've bought so far are very pretty but don't have much taste. However, your picture and recipe make me want to try them again!!!

I love strawberry shortcake and that is exactly how I make mine. I have to go to McLeod Farms to get more tomorrow...I try to put up a couple of gallons each year. Those look wonderful!
