I made a delicious pumpkin cake yesterday while recooping from this yuck thing that has grabbed me. It is so simple that I wanted to share it with you in case you needed a great Thanksgiving dessert.
Pumpkin Cake
1 spice cake mix
3 eggs
1 c pumpkin pie mix
1/2 c vegetable oil
1 c water
Blend all ingredients well for three minutes. Pour into a greased 9 by 13 pan
and bake for 30 minutes at 350. Let cool.
Frost with one can of whipped cream cheese frosting with 1 t of cinnamon added and blended well.
This rose so well, it was a good four inches. Pumpkin pie mix has spices and eggs in it so this recipe needs no additional treatment. It's so very moist!
If you do not like sweet frosting, try cool whip on top. It's delicious, too!
