My mother makes a unique potato soup that she and I adore. Every year I must make this soup at least twice.... once in the fall and once in the winter. We both love it with buttered toast but my mom also loves it cold. I would rather reheat mine!
It's easy to make. You need
2-3 baking potatoes peeled and cubed
1 medium onion chopped
6 c whole milk
1 c flour
2 eggs
Place the potatoes and onions in a pot and cover with water. Bring to a boil and cook until vegetables are tender. Drain the water, add the milk. Bring to a boil again. While milk is heating, combine the flour and eggs. You will get a sticky dough. Drop teaspoonfuls of dough into the hot milk, repeating until all the dough is used. Cook until dumplings are cooked through. Before serving, salt and pepper generously.
Found out that my Grandmother Holt made it this way but we are not sure if it was any farther back. My Grandmother Holt used to make it when her kids were sick. It was a comfort food for all of us!

Can I just tell you that we fixed your chili, and it absolutely rocks!!!! We're going to make it again on Halloween. HH added a bit of Cumin (is that how you spell it)...it's his favorite spice.

Mom is doing ok. Her knee is giving her lots of problems, and she is still driving to Springfield most weekends to help with her mom. She said to tell you "hi".

My mom made potato soup this way when I was a little kid. My grandma made it before her. When I make it I add mixed veggies and bacon.
DeleteMy grandmother (Mammy) used to make Potato Dumpling soup. This really took me back. She also made Meal soup (our of cornmeal) and both were comfort foods...I can taste that wonder soup now and those tender dumplings! Thanks for the recipe...

ReplyDeleteI've posted many times about my Mom making potato soup when she comes to visit. Yummy! Her's doesn't have any dumplings in it. It's just creamy potato soup. We add a dollop of sour cream to the top and sprinkle with shredded cheese and sometimes add some crumbled bacon. Yum! It's bedtime, but suddenly I'm hungry!
