Drum roll please..........
The winner was Ashley's Chicken Chorizo Burger with Avocado Mayo! The burger was so tender and good, with great flavors. It will be repeated often this summer!
First you need to make the mayo....
1/3 cup fat-free mayonnaise
1/4 cup fresh cilantro leaves
2 tablespoons fresh lime juice
1/4 teaspoon salt
1/2 ripe peeled avocado, seeded
To prepare mayonnaise, combine first 5 ingredients in a food processor; pulse 10 times or until combined. Cover and chill mayonnaise mixture. This gives the mayo time to absorb all the flavors.
Then make the burgers...
1/2 pound Spanish chorizo sausage
1/4 teaspoon salt
5 (6-inch) corn tortillas, torn into bite-sized pieces
1 1/2 pounds skinless, boneless chicken breasts, coarsely chopped
1 jalapeño pepper, seeded and chopped
Cooking spray
To prepare burgers, remove casings from sausage. Place sausage, salt, tortillas, chicken, and jalapeño in food processor; process 30 seconds or until mixture is coarsely ground. Divide mixture into 8 equal portions, shaping each into a 1/2-inch-thick patty.
Place patties on a grill rack or broiler pan coated with cooking spray; cook 7 minutes on each side or until done.
To serve, you can lightly toast an onion bun, and layer, tomato, lettuce, and avocado mayo on the sandwich. Yum.
All the burgers...

ReplyDeleteI have to say that I love your RWW excitement Terri! I have an extra RWW related post planned for this Monday~ part I of Grace Kelly's life.
While I would love to do another tea/party, the dilemma I am now faced with is that school is out and I have Sweet Boy home 24/7 and he is ALOT of boy. :) So, I am struggling to respond to comments as it is. (I am one of those who wants to visit everyone who is kind enough to leave a comment.)What to do? Be like several other bloggers I know who host parties and then never bother to thank their participants? Booo hiss. Suggestions?
